Make Your Own Sweet Potato And Coconut Soup (Vegan)


You may have noticed already but I'm a sucker for making my own vegan soups! 

One of my favourites and easiest to make is this sweet potato and coconut soup.

It doesn't take long at all and is one of the most delicious soups I've made. It's also incredibly cheap to make.
It makes for a perfect lunchtime portion.

If you want to make it for dinner, I suggest adding some crusty bread or something to make it a bit more substantial.

This recipe is based on a two person serving size.

PS: (I'm using very big bowls in these photos but this recipe is for a normal soup bowl full)


First up you'll need ingredients:

A teaspoon of olive oil 
2 Vegetable stock cubes mixed with 250ml water
Half a large sweet potato (save the second half to make it again!)
Half a red onion
250ml of coconut milk
Chinese 5 Spice and Cajun spices (option to add whatever spices you like)


Peel and cut half a large sweet potato into chunks.
Cut half an onion into small chunks.


Put a teaspoon of olive oil into a saucepan and put it on a medium heat.


Put the sweet potato and onions into the saucepan and stir them around in the oil to coat them. Let them stir fry for 15 minutes or until the sweet potato has softened enough to cut in half. 
Stir regularly or they will stick to the pan and burn.


At this point it will smell glorious. Once the potato has softened add in the spices. Add to your own tastes. You can use whatever seasoning you like. I imagine black pepper would be a good choice but I really love chinese 5 spice! I might try black pepper next time as well! 

Once the spices are added, stir fry for about 3 minutes longer.


Next add in the 250ml of vegetable stock and the 250ml of coconut milk. It will smell AMAZING although it might not look so appealing but trust the process! 
Bring it to a boil then turn the hob off.


Next you need to transfer it into a blender.
I use a Breville nutribullet.  

I transfer the soup from the saucepan to the blender using a ladle. There should be enough soup to fill it to the top perfectly. Careful because the blender will get hot.


When you're ready and it's secure, turn the blender on. It should only take around 1-2 minutes to get it completely pureed. 
By the time it's done it should look like thick mango juice.


Careful pouring your soup into a bowl! Feel free to season with some oregano or coriander!
And Voila! There is your soup!


As you can see it's a super easy recipe and the texture of the soup is really nice. Anyone can make such a simple recipe like this and it tastes just as good if not better than anything you'll get in a fancy restaurant. One of my favourite meals :)
